Processing
The cocoa bean starts its life as a seed inside a cocoa pod, which grows directly from the trunk of the tree Theobroma cacao. When the pods mature the beans are harvested, fermented and dried. Both fermentation and drying are important steps in flavor development.
Cocoa beans are cleaned, the shells are broken and removed, leaving the nibs.
Roasted nibs are ground into cocoa mass, also known as cocoa liquor or cocoa paste.
Using a hydraulic press cocoa liquor is pressed to separate it into cocoa butter and cocoa cake. The cocoa butter is filtered and stored. Based on the intended use, it can be partially or fully deodorized, blended and then shipped to manufacturers in a solid or liquid form.
