Whole Almonds

According to current knowledge, the almond tree appears to have originated in the mountainous regions of Central Asia. Colonists eventually brought almonds to the USA, although only plantations in California showed any promise.

Today, California is the main area of global production, far ahead of Spain and Greece. The almond trees bloom between March and April. To harvest, the almond tree is shaken with a so-called "shaker" and the almonds are collected. The nuts are cracked and sorted manually and electronically using laser scanners by various producers in the harvesting regions.

Almonds were traditionally used in the production of marzipan. Nowadays, almonds are a must-have ingredient in baked goods and confectionery.
