Less is more (and think multi-functional)

Consumers want to understand everything they read on the label, and long lists can give the impression of a highly processed product. This means brands may look to make their ingredients go further, choosing options that offer multiple functionalities in one to keep labels short.

So, think ingredients that can be used as replacements for multiple artificial additives. Cocoa, nut or spice ingredients can provide both color and flavor, removing the need for artificial ingredients. In golden milk, for example, the inclusion of turmeric brings taste and hue, while the protein of nut flours adds a natural thickening quality to replace industrial thickeners like xanthan gum. Dairy products also offer a range of clean label benefits. The protein content in dairy offers excellent water binding, whipping and gelation properties, as well as emulsion, caramelization and color.
