Available in either liquid or solid formats (as blocks, ingots and easier-to-melt liquor thins), our cocoa liquors provide the flexibility to achieve recipe goals.

Whole bean roasted

Utilizing this traditional roasting method helps enhance the cocoa taste expression in the cocoa liquor and allows recipes to benefit from its rich, full flavored bouquet.

Nib roasted

Nib roasted cocoa liquor options include low, medium, and high roast varieties, bringing more possibilities and taste combinations to premium chocolate products.

Single origin

Our cocoa liquors from specific origins, ranging from Ecuador, to Ghana to Indonesia, help customers meet consumer demands for focused taste profiles in chocolate and confectionery recipes.


We supply a specific line of ingredients carefully chosen for chefs and artisan needs. deZaan Quito Oro is  nib roasted cocoa mass made from selected single origin cocoa beans from Ecuador. With floral notes of jasmine and orange blossom, Quito Oro has a tangy, fruity and dark bitter cocoa flavour. Delivered in drops and in 1kg bags.

What is cocoa liquor?

Cocoa liquor, also known as cocoa mass or cocoa paste, is the key to great chocolate and it provides the taste signature of the recipes in which it is used. ofi's sourcing, processing and packaging capabilities allow for exceptional quality cocoa liquors as the flavor of cocoa liquor is dependent on three distinct, yet equally important factors: 


  • the type of cocoa bean (benefiting from ofi’s selection and blending expertise),

  • development of the flavor precursors in the cocoa bean during fermentation and drying, and 

  • the further enhancement of flavors that occurs during fully controlled roasting processes.
